The idea is to eat the soufflé immediatley so it doesn't fall! I love the sound of the goat cheese soufflé.

That part I understand--but literally I took it out of the oven and before I could even place the pan on the cooktop it was deflating!

It's lovely -- both are, actually. Chocolate and whipped cream is one of my favorite desserts. And the goat cheese souffle has such beautiful color and shape. It makes me want to take a large spoon and dig in.

I doubt you did anything wrong. Some souffles seem to hold their air better than others. You might experiment with adding some lemon juice to the egg whites.
