Slow cookers (crock pots) are one of our favorite tricks for eating healthy low-cost tasty food on a strict time budget. They score only a 9 out of 10 on preparation time (chopping raw ingredients means a slow cooker meal takes half an hour in the morning before work), but they are so convenient in ways that go beyond just quick preparation time. When you come home from work or afternoon outings, the meal is done. Few dishes to clean. Great in February.
